One-Ingredient Ice Cream

I’ve stumbled upon this recipe many times this summer, so finally I decided to make it a couple of weeks ago. I didn’t have a blender, so I’ve just been making it by taking ripe bananas and mashing them (a potato masher works great) and adding loads of cinnamon and chopped walnuts. Then I freeze it. I like to wait until it’s completely frozen then I scrape off spoonfuls of shavings. If you wait until it’s hard, your spoon will shave off the walnuts also. Alternatively, you can take it out before it’s completely frozen and it will be more the consistency of ice cream.

Two last notes:

1. DON’T freeze bananas in their peels. If you want to freeze them whole, peel them and freeze them in a plastic bag. They’re difficult to peel when frozen and your fingers will end up freezing.

2. I recommend you mash only one banana up per container so that you know how much you’re eating, if it matters to you. I made a batch out of three bananas and just ate what amounts to about 1.5 bananas plus a handful or so of walnuts before I realized how much it was. Om nom nom.
